RECIPE: “Lime Guava Leche Parfait”
We’re delighted to share this delicious and eye-pleasing 5-minute dessert with you! We challenged ourselves to make a simple dessert that had some of Steven’s favorite and familiar Dominican flavors. Enjoy!
Your Shopping List For This Meal:
3/4 cup of Guava/Guayaba paste
1.5 cups of heavy whipping cream
1 small (1.59 ounce) bag of Guarina Leche Galletas (Guarina(brand) Milk Cookies)
lime zest (from one small lime or enough to sprinkle on top of parfait)
1/4 teaspoon of confectioners sugar

Preparation:
Make the guava mousse by combining 1/2 cup of guava paste and 1 cup of heavy whipping cream in your blender using the “mix” setting. You’ll know that it’s done (in about a minute or less) when you hear/feel resistance and the mixture is thick like pudding/mousse. Note: Halfway through mixing you should scrape the sides of your blender to ensure that everything makes it into the mix.
Take two dessert glasses, layer 25% of the mousse mix into the bottom of each dessert glass to form a base layer for your parfait. For the second layer add 4 to 5 cookies to each glass. Then, for your third layer, divide 1/4 cup of guava paste evenly between the two glasses. For your fourth layer, divide the remaining mousse evenly. For your fifth layer, add 4 to 5 cookies to each glass. For your last/sixth layer, mix or hand whip your 1/2 cup heavy whipping cream and 1/4 teaspoon of confectioner’s sugar to make a simple whipped cream. Finish with lime zest and serve immediately.
Tips: Don’t add the simple whipped cream until you’re ready to serve. Instead of making your own, you can use Reddi-wip or a similar style of store bought whipped cream.
